5 Quick and Convenient Dinner Ideas

May 7, 2024

Is your household currently struggling to find enough time to cook dinners on weeknights? After work commitments, driving kids to and from sport committments, and taking care of the household, there can be limited time to cook right? I hear ya! The good news is there are actually a HEAP of nutritious convenient food options available these days annndd you really don’t need to be making everything from scratch if you don’t have the time, energy or headspace to do so. In the long term, meal prep can save you money and help you get more VARIETY into your diet…. in the short term (or during your busy weeks) these kinds of convenient options can be the bomdiggity!

Heads up – many of these convenient options may not taste AS good, or have the FRESH texture of home cooked or freshly made meals. Potentially no biggie unless you have people in your household sensitive to textures, or tastes… like my threenager.

Personally speaking, I find these kinds of quick and convenient dinners do take some trial and error to find what works (For example, I love the butter chicken below but my kids find it too spicy). Once you’ve found something that works, you can add to your ‘tool-box-of-convenient-meals‘ and use as often as needed. Wahoo!

4) LOADED CHICKEN PESTO PASTA

Cook Chicken Pesto Pasta and 2serves (1cup) mixed vegetables as per instructions on pack. Sauté baby spinach (or thinly slice up). Roast pine nuts. Cook or chop extra chicken if using (highly recommend as typically not enough contained within the meal base itself). Stir mixed vegetables, spinach and extra chicken through the pasta. Serve with pine nuts on top.

.

5) BEEF QUESADILLA with SIDE SALAD

Cook Quesadillas as per instructions on pack. If using rice and mixed veg: Cook using as per instructions on pack then add half serve of each into Quesadillas (**this is mainly to bulk them up as they are considered quite a small serve on own (or mix the rice and veg together and serve on the side). Serve with side salad.
