2 Food Prep Friendly Recipes Currently On Rotation In Our House

As a busy mother, I see the benefit of not having to plan new meal ideas every week. I don’t have the time to browse cookbooks (or scroll social media) for new and exciting meal ideas over a quiet cup of tea very often (although I do absolutely see the benefit in trying new recipes, or sitting with a quiet cup of tea and flicking through recipe books every now and again). What we find works really well is keeping things as simple as possible during our busiest weeks. That means we have a selection of recipes we know and love, on rotation. These are recipes that now require minimal mental load. Happy freaken days! With that in mind, here are two super simple food prep friendly recipes that are officially on rotation in our house.

DISCLAIMER: The first recipe my kids did not like, but it’s not for them, it’s for me. The second recipe my 7yo loved but my 2yo took some convincing. He didn’t like that the pasta was stuck together – but was mildly happy when I made it look more like pasta and less like a slice (ie. so he could use his big boy fork).

CHICKEN AND VEG TRAY BAKE 

This one is a great simple option to meal prep for your work day lunches, or a quick one dish meal for dinner.

Ingredients

  • A block of feta
  • Chicken breast
  • Veggies of your choice… I used: capsicum, beans, broccolini, cherry tomatoes, leftover roast carrots and potato
  • Mingle Seasoning of your choice… I used Holy Moly Guacamole (a zesty Mexican flavour hit)
  • Olive oil

Method

  1. Preheat oven to 180 deg
  2. Place feta in the centre of the pan, add in veggies around the outside.
  3. Sprinkle with olive oil & Mingle seasoning
  4. Add in chicken breast and season with Mingle seasoning
  5. Cover pan with foil and cook contents for 20 mins
  6. Remove foil and cook for a further 10-15 mins
  7. OPTIONAL: Cook carb of choice (I used rice)
  8. Take dish out and allow to cool slightly. Remove chicken and place aside to slice. Add cooked carb to feta veggie bake & stir through ensuring all of the feta is broken up and evenly distributed.
  9. Dish up with sliced chicken, garnish with fresh herbs if wish.

PASTA BAKE SLICE 

This one is a great family friendly option for lunchboxes and after school snacks.

Ingredients

  • 1 grated zucchini (use 2 if only using carrot and zucchini)
  • 2 grated carrot
  • 1/2 cup peas/corn (optional)
  • 1/2 cup diced red capsicum (optional)
  • 1 1/3 cup grated cheese (I used mix of mozzarella and parmesan)
  • 200g diced bacon (or can use ham or turkey if wish)
  • 5x eggs
  • 1/4 cup self raising flour
  • Garlic and salt to taste (or herbs of your choice)
  • 200g cooked pasta

Method

  1. Preheat oven to 180.
  2. Mix all ingredients together in a bowl.
  3. Place in greased tray.
  4. Top with thin layer grated cheese.
  5. Cook for 15-20mins.
  6. Allow to cool before cutting into slices. Store in fridge for lunches or freeze.
